
Chocolate Brownie and Coffee Ice Cream Sandwich
This is one for grown-up girls, with caffeine and chocolate hits in equal measure. The coffee ice cream takes the sweet edge off the brownies.
The perfect finish to a mid-summer girly lunch.

Method
- Melt the chocolate with the margarine in a bowl over a pan of boiling water.
- Stir in the sugar, milk and vanilla essence, then add the flour. You will have something that is a strange gloopy consistency.
- Spread into shallow oblong tin and cook for about 25 minutes at 200ºC/400ºF until cooked.
- Leave it in the tin to cool, then cut into slices.
- Place a dollop of coffee ice cream between two fat slices of brownies.

- 75g (3oz) chocolate
- 150g (6oz) margarine
- 150g (6oz) soft brown sugar
- 150g (6oz) self raising flour
- 1 teaspoon natural vanilla essence
- 3-4 tablespoons of milk
