Chocolate Brownie and Coffee Ice Cream Sandwich

This is one for grown-up girls, with caffeine and chocolate hits in equal measure. The coffee ice cream takes the sweet edge off the brownies.

The perfect finish to a mid-summer girly lunch.

Method

  1. Melt the chocolate with the margarine in a bowl over a pan of boiling water.
  2. Stir in the sugar, milk and vanilla essence, then add the flour. You will have something that is a strange gloopy consistency.
  3. Spread into shallow oblong tin and cook for about 25 minutes at 200ºC/400ºF until cooked.
  4. Leave it in the tin to cool, then cut into slices.
  5. Place a dollop of coffee ice cream between two fat slices of brownies.

Brownies

  • 75g (3oz) chocolate
  • 150g (6oz) margarine
  • 150g (6oz) soft brown sugar
  • 150g (6oz) self raising flour
  • 1 teaspoon natural vanilla essence
  • 3-4 tablespoons of milk
